10 Minute Burrito Bowl

  • ½ chicken breast, sliced

  • ½ cup brown rice, cooked

  • ½ tbsp taco seasoning

  • ¼ cup canned black beans, rinsed and drained

  • ¼ cup corn, rinsed and drained

  • ¼ cup diced tomatoes, rinsed and drained

  • ⅛ cup cheddar cheese, shredded

  • 1 tbsp water

  • Start by heating a large skillet over medium heat with coconut oil. Add the sliced chicken and saute for about 7-8 minutes on each side or until completely cooked through.

  • Add the taco seasoning and water and stir to coat the chicken strips. Cook for another 3 minutes or until the taco seasoning and water mixture form a sauce-like consistency.

  • Serve over a bowl of cooked rice and top with beans, corn, diced tomato, and shredded cheese.

  • Dig in and enjoy!
