½ chicken breast, sliced

½ cup brown rice, cooked

½ tbsp taco seasoning

¼ cup canned black beans, rinsed and drained

¼ cup corn, rinsed and drained

¼ cup diced tomatoes, rinsed and drained

⅛ cup cheddar cheese, shredded

1 tbsp water
-
Start by heating a large skillet over medium heat with coconut oil. Add the sliced chicken and saute for about 7-8 minutes on each side or until completely cooked through.

Add the taco seasoning and water and stir to coat the chicken strips. Cook for another 3 minutes or until the taco seasoning and water mixture form a sauce-like consistency.

Serve over a bowl of cooked rice and top with beans, corn, diced tomato, and shredded cheese.
